In Chile, we can enjoy the fruits of our coastline, such as Chilean salmon, which is a healthy, responsible, and environmentally sustainable alternative. Salmon has several benefits and properties. It is high in protein and rich in vitamins such as omega-3, vitamin A, vitamin B3 and B6, vitamin D, and vitamin K.

It is clear that Chilean salmon is good in every way, but it is even better on your plate. And what could be better than a 100% Chilean recipe? That is why today we present a traditional recipe for Cancato de salmón, a dish from southern Chile that you simply must try!

The term cancato comes from the Mapudungun word Kangkatu, which means roasted meat, and is derived from the verb Kangkan, which means “to roast.” In the Castilian language of Chiloé, the Mapuche word ‘canca’ was adopted to refer to the act of roasting, and later the expression “hacer cancato” became popular to specifically describe the process of roasting fish.

Ingredients:

  • 4 salmon fillets
  • 2 skinless sausages
  • 1 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 200ml white wine
  • 1 onion
  • 1 red or green pepper
  • 1 tomato
  • Olive oil
  • Salt and pepper
  • Dried oregano

Step-by-step preparation

  • The first step is to marinate the four fillets. Add one tablespoon of lemon juice, salt, and pepper, and set aside.
  • Preheat the oven for ten minutes at 180°C.
  • In a baking dish, add a bed of onions and peppers, previously cut into julienne strips. Place the marinated steaks on top.
  • Add 2 slices of tomato and cheese to each fillet and top with sliced sausage.
  • Bake for 15 to 20 minutes, adding 200 ml of white wine 5 minutes before the end to moisten the salmon.
  • Remove and serve immediately with a side dish. 
  • Sprinkle with oregano and enjoy this delicious salmon dish!
